These Banana Lentil Muffins have been a been a favorite of my kids for years now. I think everyone has a good, staple banana recipe in their back pocket and this is ours. I promise you can’t taste the lentils!
How To Make Banana Lentil Muffins Step By Step
You’ll need some cooked lentils before you start. Not sure how to make them? Here’s how to cook lentils on the stove. I make a whole bag at once, portion into one cup servings and freeze especially for baking these muffins.
Here’s how to make them:
- Grab a food processor. Add lentils, bananas, oil, egg, sugar and vanilla and blend until well combined.
- Add flour, oats, baking soda, and cinnamon and blend again.
- Pulse in some chocolate chips and transfer to muffin tins.
- Bake at 375 degrees F for 18 minutes.
I do recommend a food processor to make these but if you don’t have one you can use a blender. Blend the lentils, oil and eggs until smooth. Then transfer to a bowl with mashed bananas sugar and vanilla and mix in the remaining ingredients by hand.

Ingredients
- 1 cup cooked green or brown lentils (approx 1/3 cup dry)
- 3/4 cup mashed banana (2–3 medium)
- 1/4 cup oil (i used avocado oil)
- 1 egg
- 1/4 c sugar
- 1 tsp vanilla
- 2/3 c oats
- 2/3 c white whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Add cooked lentils, oil, banana, egg, sugar and vanilla to a food processor and process until smooth.
- Add oats, flour, baking soda, and cinnamon and process until just mixed.
- Add chocolate chips and pulse a couple of times to combine.
- Scoop into greased muffin tins and bake at 375 for 18-20 minutes or until a toothpick inserted into the center comes out clean.

What are lentils?
Lentils are actually part of a wider group called pulses that covers dried peas, beans, chickpeas and lentils. Pulses are a good source of fiber and protein and also contain important nutrients like iron, potassium and folate. They’re also naturally gluten-free and can be purchased dry and cooked or purchased already cooked in cans.
They’re also inexpensive and can be used as a replacement for meat in many dishes for a more budget-friendly option.
Can I freeze banana lentil muffins?
Yes! Just let them cool completely, then place in a Ziploc bag, remove the extra air and freeze. Reheat in the microwave or thaw on the counter.
