Learn how to make this easy zucchini bread recipe. The food processor makes the zucchini even less noticeable and it’s packed with flavor.

Over the past year, I’ve been working to create a list of basic go-to recipes for things we make frequently. Over the past few months, we shared our favorite:

  • Banana Bread Recipe

Today we’re adding zucchini bread to that list. I’ve been looking for a lower-sugar recipe that the kids still enjoy eating and this is it!


How To Make Easy Zucchini Bread

We choose to make this recipe in the food processor because it’s an easy way to blend everything up and it makes the zucchini even less noticeable. All you have to do is:

  • Grate some zucchini and add to the food processor (you don’t even need to squeeze the extra moisture from it.
  • Add sugar, eggs, vanilla, oil and applesauce and blend until smooth.
  • Add flour, baking soda, cinnamon salt and hemp seeds and blend again.
  • Spoon into a loaf pan and bake!

Ingredients

Scale
  • 1 cup shredded zucchini
  • 1/2 cup sugar
  • 1/3 cup oil (we use avocado oil)
  • 1/4 cup applesauce
  • 1 tsp vanilla extract
  • 2 eggs
  • 1.5 cups flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup hemp seeds

Instructions

  1. In a food processor combine zucchini, sugar, oil, applesauce, vanilla and eggs and process until smooth.
  2. Add flour, baking soda, cinnamon, salt and hemp seeds and process again.
  3. Pour into a 9×5 loaf pan lined with parchment paper and bake at 350 for 45-50 minutes.

Zucchini Bread FAQs

Do you take the skin off zucchini for bread?

Nope! No need to peel the zucchini before grating.

How do you keep zucchini bread moist after baking?

Store in an airtight bag or container. After 2-3 days, consider moving to the fridge to keep mold from growing, especially during the summer. Don’t slice your zucchini bread until you’re ready to eat it. Slicing leads to drying out.

How many zucchinis do I need?

A medium zucchini usually makes about 1 cup shredded zucchini.

How do you get water out of zucchini for zucchini bread?

If your zucchini are very watery, you can put shredded zucchini in a paper towel and lightly squeeze to remove some of the water. If you squeeze lightly and no water comes out, you don’t need to squeeze any more!
