Learn how to make these White Bean Sweet Potato Bars. They’re kid-friendly, full of fiber and protein and perfect for breakfast or snack time.

We’ve been making these sweet potato white bean bars for several years now and my younger two kids absolutely love them.

If you didn’t know ahead of time, you’d never guess that these bars are made with beans because you can’t taste them at all. Beans are perfect for baking and a great way to add protein, fiber and other nutrients to kid-friendly snacks.

How To Make Sweet Potato Bars

If you have a food processor, it couldn’t be easier to make these white bean sweet potato bars:

  • Add beans, cooked sweet potato, egg, maple syrup, oil and vanilla to the food processor and blend until smooth.
  • Add flour, baking soda, cinnamon, salt and hemp seeds and process again.
  • Add chocolate chips, pulse a few times and spread into a 9×9 pan lined with parchment paper.
  • Bake and enjoy!

Ingredients

Scale

1 (15 oz) can great northern beans (drained and rinsed)
3/4 cup cooked mashed sweet potato
2 eggs
1/3 cup maple syrup
1/3 cup oil (i use avocado oil)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking soda
2/3 cup white whole wheat flour
1/4 cup hemp seeds (optional)
1/2 cup chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. In a food processor, combine beans, sweet potato, eggs, maple syrup, oil and vanilla. Process until smooth.
  3. Add cinnamon, baking soda, flour and hemp hearts and process until combined.
  4. Add chocolate chips and pulse a few times.
  5. Spoon into a 9×9 pan lined with parchment paper.
  6. Bake at 375 degrees for 20-22 minutes.
  7. Let cool, cut and serve. Store in the fridge.

Sweet Potato Bars FAQs

Are white beans and navy beans the same?

White beans is a general term used to describe white beans like great northern beans, cannellini beans and navy beans. We use great northern beans most often but I’ve also made these with cannellini beans and it works just fine.

Are white beans good for you?

Yes! White beans are a great source of protein and fiber and also contain nutrients like folate, magnesium and Vitamin B6.

Do you have to cook canned white beans?

No. They are pre-cooked and ready to use. Before adding them to this recipe be sure to open the can, drain the liquid and rinse and drain the beans.

Can you make sweet potato bars in the blender?

Yes. Combine beans, sweet potato, egg, oil and maple syrup and blend until smooth. Then transfer to a bowl, add remaining ingredients and mix by hand.

Can you make these sweet potato bars into muffins?
