- 1/4 cup maple syrup (for sweeter granola you can increase up to 1/2 cup)
- 1/4 cup oil (we use avocado oil)
- 1 – 2 tsp cinnamon
- 1/2 cup hemp seeds (or mix of hemp, chia and flax)
- 1/2 cup pumpkin seeds (optional)
- 1 egg white
- Optional mix-ins: chocolate chips, dried fruit like raisins, craisins or chopped dates etc
Instructions
- Place oats in a large bowl.
- Mix together oil and maple syrup, pour over oats and stir well.
- Add cinnamon, hemp seeds (and any other seeds you’re using) and stir.
- Whisk egg white until slightly frothy, pour over oats and stir gently to coat.
- Spread onto a parchment-lined baking sheet – make sure the granola isn’t too spread out. You want it to be touching so it sticks together to make clumps.
- Bake at 300 degrees for 35 minutes. Do not stir.
- Let cool completely, break into chunks and add chocolate chips and dried fruit.
Notes
Feel free to add a cup of chopped nuts or pumpkin seeds to the mixture if you want.
You can also add 1 tsp vanilla extract for even more flavor!
