This easy homemade salsa is made with Roma tomatoes and comes together quickly in the food processor. Plus it tastes better the longer it sits in the fridge!

Ingredients

  • 1.5 pounds Roma tomatoes
  • 1/41/2 of a medium onion, depending how much onion you like
  • 24 green onions
  • 1 jalapeno, optional
  • Juice from one lime
  • Cilantro – approximately half a cup
  • 1 clove of garlic, peeled (more if deisred)
  • salt to taste (start with 1/2 tsp and add more!)
  • Pinch of sugar

Instructions

  1. Cut the tomatoes into quarters, then use a knife to remove the core and seeds from each piece. Add tomatoes to a food processor.
  2. Add green and white onions, roughly chopped, plus garlic, cilantro and jalapeno.
  3. Add lime juice and a little salt and pulse food processor until everything is chopped and desired consistency is reached.
  4. Add a pinch of sugar, taste and add more salt as needed.
  5. Transfer to storage container and feel free to drain a little excess liquid if needed.
