Once you learn how to make chicken enchiladas, they will quickly become a family favorite. Easy to make, kid-friendly and delicious!

Ingredients

  • 22.5 cups cooked chicken, shredded or cubed
  • 1 (10.5 oz) can cream of chicken soup (or 1 cup sour cream)
  • 2 cups shredded cheese, divided (mexican, cheddar or colby jack)
  • 8 flour tortillas (i usually use 8 inch)
  • 1 (10.5 oz) can enchilada sauce

Instructions

  1. In a bowl, mix cooked chicken, cream of chicken soup and 1 cup cheese.
  2. Pour a little enchilada sauce on the bottom of a 9×13 pan to coat.
  3. Spoon chicken mixture into tortillas, roll up and place seam side down in the pan.
  4. Cover with remaining enchilada sauce, using a pastry brush to coat all of the tortillas.
  5. Top with the remaining cup of cheese.
  6. Cover with foil and bake at 375 for 20-25 minutes.

Notes

Feel free to add additional mixins like sauteed veggies, black beans, green chilis etc.
