I’ve taught all my kids how to make these because they’re so simple even the young ones can do it!
Ingredients in chicken enchiladas
To make these chicken enchiladas you only need a few ingredients.
- Cooked chicken- sometimes I make these using leftover chicken from earlier in the week. Other times i make shredded chicken in the instant pot or crockpot. You could also use rotisserie chicken or grilled chicken cut into cubes.
- Cream of chicken soup – my favorite brand is Pacific Foods. Cream of mushroom soup also works. If you want the creaminess without using condensed soup, you can use hummus or sour cream!
- Tortillas – flour tortillas tend to work best because they don’t break when you roll them.
- Shredded cheese – we use colby jack but you can use Mexican, cheddar or whatever your favorite is.
- Enchilada sauce – if I’m serving these to the kids I use mild but feel free to get medium or hot!
How to make chicken enchiladas step by step
To make the enchiladas:
- Mix cooked chicken, a can of cream of chicken soup and some shredded cheese in a bowl.
- Pour a little enchilada sauce on the bottom of a 9×13 pan and tilt to cover the bottom.
- Spoon chicken mixture into tortillas, roll up and place seam side down in the pan. You should be able to fit 6-8 tortillas depending on how full you fill them.
- Pour the remaining enchilada sauce on top and use a pastry brush to make sure all the tortillas are coated.
- Top with shredded cheese.
- Cover with foil and bake until heated through.

Ingredients
- 2 – 2.5 cups cooked chicken, shredded or cubed
- 1 (10.5 oz) can cream of chicken soup (or 1 cup sour cream)
- 2 cups shredded cheese, divided (mexican, cheddar or colby jack)
- 8 flour tortillas (i usually use 8 inch)
- 1 (10.5 oz) can enchilada sauce
Instructions
- In a bowl, mix cooked chicken, cream of chicken soup and 1 cup cheese.
- Pour a little enchilada sauce on the bottom of a 9×13 pan to coat.
- Spoon chicken mixture into tortillas, roll up and place seam side down in the pan.
- Cover with remaining enchilada sauce, using a pastry brush to coat all of the tortillas.
- Top with the remaining cup of cheese.
- Cover with foil and bake at 375 for 20-25 minutes.
Notes
Feel free to add additional mixins like sauteed veggies, black beans, green chilis etc.
FAQs about how to make chicken enchiladas
What else can I put in chicken enchiladas?
This recipe is very flexible. You could easily substitute cooked ground beef or turkey for the chicken. You could even use our taco meat recipe! Add some black or pinto beans to the mix or make them vegetarian by using just beans or lentils.
If you like vegetables, try sauteeing some diced peppers, onions or mushrooms and mixing those into the filling!
Should I use corn or flour tortillas for enchiladas?
I typically use flour tortillas but many people believe corn tortillas are the secret to good enchiladas because of the flavor they add.
Do you heat corn tortillas before making enchiladas?
Yes. If using corn tortillas, warm them in a pan with a little oil before using them to roll up the filling. This will help keep them from tearing.
Although I usually skip this step, if you fry your tortillas (corn or flour) in oil before using, it will help create a barrier against the enchilada sauce and keep the tortillas from getting too soggy!
What to serve with chicken enchiladas?
Chicken enchiladas pair well with rice. Here’s how to cook white rice on the stovetop. You could also serve with a side salad or steamed veggies or some easy homemade refried beans.
Can you freeze chicken enchiladas?
Yes! Enchiladas freeze well. This is a great meal to double the recipe while you’re making it and make two pans full. Give one to a friend or stick it in the freezer for a busy week.
I actually prefer to freeze before baking. So when you stick your first pan in the oven, cover the second pan with plastic wrap and freeze. When ready to cook, thaw overnight in the fridge and then bake as directed above.
